Would it be ok if use my hands to hold something near my shoulders or my head? Instead of having them down near my butt on the sides? I find it easier to do the leg lifts if Im holding something out from my shoulders or near my head.

Yes, as long as you don’t go too low in the bottom position, which places more strain on your lower back. If you are on a table (as in the video), you can hold onto the edge of it. If you are on the ground, you can hold onto the leg of a couch or something firmly fixed.
